We are so fortunate these days with how readily available information is to us especially with blogs! From our own blog posts about the times we’ve done the Advocare cleanse to providing you with healthy recipes we think y’all know we are always on the look out for doing what’s best for our bodies.  Blogging, twitter and instagram have all played an awesome part in connecting our blog with other bloggers and finding food bloggers that share delicious and healthy recipes.  Delicious and healthy recipes that we love! So we wanted to periodically share some of the foods we find elsewhere and are constantly making at home with you!  So without further ado let’s really get to what this post is all about:

Fit Foodie Sam – Wonton Tacos: These are delicious and a fun twist to turkey taco meat!  This dish has become a regular at our house and they are easy to put together and don’t take long to bake at all.  I’ve also heard Sam has done a pizza spin on this recipe as well, which will be tried soon!

Peas & Crayons – Confetti Pasta Salad: If you are look for a dish to bring to your next potluck, to a pool party, to a 4th of July party or if you happen to already be looking for dishes for Labor Day Weekend – look no farther!  This is your dish!  I have made Jenn’s dish multiple times in the past couple of months and have heard nothing but good things from everyone who has gotten to have a serving!

Happy Half-a-versary to LiAR

Let’s just start by saying good Lord this was an early and long morning. Ok, fine, we’ve gotten up earlier for Disney races, but still. Everything said you should NOT be in downtown Dallas later than 6 a.m. Fiiine, cue alarm clocks going off in the 4 o’clock hour. Beth picked up Teal at 5 a.m. and we were in a parking spot by 5:30 a.m. So there we were with 2.5 hours to kill before the start of the race. Our early arrival insured us an awesome parking spot and first use of port-a-potties!

Thankfully we realized the Luebs were down there just as early as us. More people to entertain ourselves! Then of course it was time to head to our corral where we found even more frunners to hang with before the official start.

Teal: I, for the first time in a while, prepared for this race in terms of, eating right the few days before, getting enough sleep before, laid out my clothes, painted my finger nails, downloaded a new playlist…etc. I reallllly wanted this race to go well. I said I didn’t need to PR and I still say that, but I did want it to feel good. You know like, those runs that almost feel effortless. I haven’t had a single one since the marathon. I wanted one just as a boost of confidence. NOPE. Fail, giant zero. This didn’t feel good. It felt like work, and I did work.

I really had debated this week’s training runs. We were scheduled for 10 at Marathon pace on Thursday. I decided to still do the run, thinking more long term to the marathon, and decided to run it a day earlier, and then rest my legs until Sunday. I figured it would be ok, but I didn’t know. Running a half marathon with 28 miles on your legs that week was probably not the best idea. I really didn’t think much of it, apparently I have more faith in my legs than they have in themselves, I thought they would recover. I don’t think they did.

Beth: So it was kind of important to me to do all that I could to make a potential PR happen at this race. This means I skipped my 10 mile run at marathon pace on Thursday. A big oops there since it goes against one of my December goals. Brent and I actually had two Birthday parties we wanted to go to the night before which had me eating a sushi dinner – not my norm, but at this point with food I don’t really have tons of issues. *knock on wood* Something I don’t take for granted, trust me! When I didn’t get full from sushi I ate goldfish on the way to the next Birthday party.  I made Brent take the bag of goldfish away so I wouldn’t eat them all, but I was still hungry. Which resulted in me stealing part of someone’s spinach quesadilla. Haha. Not my typical night before a race! Oh and not to mention we hit traffic going home, so I definitely got to bed later than I had anticipated.

Miles 1-4

Teal: These actually felt good, my pace was good, I felt like I could keep it, my legs didn’t feel bad. It was super super humid 90% and even on some accounts I saw 100% humidity and close to 70 degrees. And huge eye roll to those who say perfect running conditions. Nope. They are not; try 50 degrees, no humidity. I’ll take that. I was drenched by mile 4 and my hair was sticking to me. LOVED running over Large Marge (also known as the Margaret Hunt Hill Bridge). Love that bridge and it’s a great addition to Dallas. Brian L. was at 4 to cheer us on with Mama C, Fiona and Dat! Boost of energy!!

Beth: Back to my goals again, I said I wanted to run a strong race and I knew that had to start from the beginning. I told myself this wasn’t the Turkey Trot and I’m not about to start being a crazy people dodger. I did the bare minimum to go by people slower than me. I kept making a conscious effort to see how I felt and slow down if necessary. My mind was also all, look! Old Red where I got married. Look! Belmont Hotel where your Bachelorette Party was and the Shepard Fairey mural you took some engagement pictures in front of that! I knew after I crossed Large Marge I’d see my first set of familiar faces and was ready to see them too!  And I looooved hearing Mama C call me Beeper at this point! Pumped me up!

Miles 5-8

Teal: Love, loved, loved running passed Scottish Rite. I love that hospital and spent a ton of time there in High school. I volunteered in Child Life my senior year, and in other areas of the hospital my Junior year. Patients and parents were outside cheering us all on. This was new and a totally good addition.

I start to feel more pain in my legs at this point. I feel labored and pretty stiff. My calf muscles were really tight and my quads ached. I just wanted to stay steady. I saw my husband and Brent around 6 and high 5’ed them. Wasn’t expected to actually see them so that was super awesome! I ended up getting super tied up at the water station around 7. I actually just stopped. It was a cluster. I think I probably spent 2 minutes here dealing with the madness. My music stopped playing and it was in my skirt zip pouch in the back. I couldn’t get it out or then back in. I asked a spectator to help me get it fixed. I think she was like “what in the world do you want me to do?” I was annoyed here and the stop made me stiffer. BONUS!!

Beth: Parts of this section of the course were similar to the past two years. Um, so I kind of just blew by Scottish Rite without paying attention.  Oops? I think I was just really determined and focused that I really kept to myself a lot this race and I might not have survived had I not done so.  I only really expended extra energy 3 times and it was each of the 3 times I saw familiar faces. Well, I guess, I expended energy in trying to see my husband which I never did. :-/ But gah, that looking for him in the crowds was tiring me out.  That’s probably just the weather factor right there. I kept thinking in this stretch, why didn’t I ask him w hat he’d be wearing? Why didn’t we figure out a mile for him to be in? I did know that Rebekah would be right around the split of the half and the full, so I kept looking for her father-in-law since he’s much taller than her. 🙂  Loved getting that high five from her at that point it totally pumped me up. Also, the wind that was occurring in random bouts during this part pumped me up as well!

Miles 8-10

Teal: I was looking everywhere for people. I thought Rebekah would be here and she was but I missed her. It really does kind of make you dizzy to find people while you are running. Which leads me to another weird thing about this race, it NEVER thinned out. It was seriously thick with people the entire time. This surprised me and it almost felt like maybe the streets were skinnier this year. I’m feeling very labored at this point and I really just wanted to stop. My legs are tight, super tight, and this is affecting the way my knee works. It always has affected it, and I have had some issues recently with the longer runs. Post runs it will hurt to even touch. This is what is happening now around 9ish. I really just want to get done and it was somewhere around this point I see the 2:10 pacer on the loop around and just said, stay in front of him and I’ll be happy.

Beth: I had known where the mile 8 sign was because we had already run by it and the split was really us running down the other side of part of the street we had just run up.  In my mind I was just trying to get to the last 5K get there and you go this.  I was going back and forth between you could PR!! It’s not happening today! Either way I knew I just need to keep going. Then I saw Brian E. in here, yelled at him but you know just to get his attention not in angry way and was glad to see a familiar face right then and there! Thanks for being out there Brian!

Miles 11-13

Teal: Just really wanted to be done. I really had no desire to keep going except I just wanted to be done. I think my shoes are too big too… I’m running this stretch just thinking of stupid things like “ I want to eat at El Fenix, can I actually ride the escalator at Ross Perot, can I have a mimosa when I’m done, how close are we, if I was a snake my feet wouldn’t hurt, why am I not Harry Potter or Meb, or a super speedy runner, what am I going to eat for lunch next week.” I just kept thinking of the dumbest stuff to make the time go. Also, while I do *think* I like this course, it has a lot of uphill, I clearly was on another planet for the down hills because I don’t remember them. Dallas is a big city, I hated the little loopy out and back thing we did between 12 and 13, there is plenty of room to not do that, it was such a tease too, because you could see the finish line and you still had to run up and around for about .70 of a mile. Lame.

Beth: It should also be noted that my thought process was kind of similar to Teal’s here – what is this new restaurant next to El Fenix? I wonder if it’s good?? We should try it sometime! Anyway, and then here’s where we make our back into downtown.  Here’s where I start thinking, man, I didn’t actually give the course map a good lookin’ at, did I? Surely they wouldn’t give us a hill right here before the mile 12 marker? But we are coming into downtown from this side it’s pretty much inevitable there WILL be a hill right here. And I’m kind of glad I figured that out so I could back off my pace a little and make it to the top of that hill alive. The out and back thing was miserable and I kept wondering if people would just cut it? Haha. It was also in this stretch I saw a runner laying on the ground and being worked on by EMTs.  I have no idea what the outcome of that was but in that moment it made my heart heavy for sure!

Teal: Done and I stayed under 2:10. Not bad and really in retrospect pretty good for my week’s work itself. Not disappointed in time because that is about average for me. I am more disappointed in the feel of it, how labored it was, and the fact that my knee proceeded to be in throbbing pain for well over an hour after and then just dull pain even as I type this a day later. Damn knee…. Anyone want to trade??

Beth: Somehow, someway I had a last little kick to give at the end. You better believe I crossed that finish line with my arms up in the air.  I knew I was teetering the line because I’d heard my Runkeeper tell me I’d hit the 1:55 mark however many yards back.  So I immediately got out my phone, got on twitter to look up Brent’s twitter (I’d set his to tweet my time) and saw that I had PR’d by 11 seconds!!!! Holy crap!  Later that day I looked online at the official results which put my time at a 12 second PR. WHOOP! I had opted to wear my Aggie ring to this race and try and take some of good juju that was out there from Johnny Football winning the Heisman! 🙂

We did it! Half marathon no. 15 for the two of us and two years of racing under out belts!

Tasty Tuesday: Mini Ham & Cheese Quinoa Cups

Thank you pinterest for this recipe find which also lead to a new blog — Iowa Girl Eats!  Not sure how we haven’t stumbled upon Kristin’s blog or her on twitter yet, but glad we finally did!  Not only is she giving her readers tasty recipes to try but she’s also a runner – like us!

Recently I was on the search for some sort of mini quiche, mini frittata, or something of that nature for a baby shower and I stumbled upon the mini ham & cheese quinoa cups. I gave them a test run the week of the shower,  thought they were fabulous and was ready to count them as a part of my contribution to the shower food!

This recipe makes 28 mini cups and calls for –

Ingredients:

2 cups cooked quinoa (about 3/4 cup uncooked)

2 eggs

2 egg whites

1 cup zucchini, shredded

1 cup shredded sharp cheddar cheese

1/2 cup diced ham

1/4 cup parsley, chopped

2 Tablespoons parmesan cheese

2 green onions, sliced

salt & pepper to taste

To get started preheat that oven to 350 degrees and get going on cooking and chopping up the ingredients!  Follow the instructions on the box of your quinoa to cook it correctly.

My favorite vegetable chopping/slicing contraption!!

Combine ALL of the ingredients into a large mixing bowl and mix it all up!

Grab your mini muffin pans and spray them with a non-stick spray and don’t just lightly spray make sure you really cover the pans with the non-stick spray.  Begin spooning out the mixture into each muffin pan.

The recipe calls for cooking them about 15-20 minutes, but I either have always had the slowest cooking oven in the world or….well, I don’t know what.  I definitely left them in the oven for more like 25-30 minutes, so just make sure to watch the sides and when they start to turn a golden brown you are safe to take them out of the oven.  Give them about 5 minutes to cool then remove the quinoa cups from the muffin pan.

There you go! Cute little delicious Ham & Cheese Quinoa Cups.  Next I’ll have to get brave and experiment with different ingredients!

Should also add that these mini cups reheat well. If you were to make them for say a baby shower or something similar like I did the mix does well if you make it the night before, refrigerate and cook them the next day.  Or you could simply make about half the recipe, save the rest of the mix and make it the next day.

After spending a few hours Friday helping with packet pickup for White Rock ‘n’ Roll I was getting pretty excited to participate in the race.  If you aren’t already excited all on your own for a race there’s no better way to get pumped than volunteering for a race.  Or at least maybe that’s just my opinion?!

I slept in until 6:00 a.m. Saturday morning and was thrilled that I got to do that.  I was out the door by about 6:30 a.m. and immediately thought “man, it’s gonna be hot…wish this race was starting in 30-40 minutes from now Buuuuuttt I still liked sleeping in!”  Then I realize that my plan of bringing both my camelbak and my armband for my iPhone to choose between running with or without water was no longer an option as my armband was still sitting on the counter in my kitchen.  Pretty sure I was a big mess that morning as I also didn’t know where my headphones were but they magically appeared in my car. 🙂  Guess I should just be glad I made it to White Rock Lake period. Ha 😉

Before the race got started I got to see some familiar faces out there!  Fellow NTX Runner, Jesse, and two tweeps I’d made friends before knowing we all had running in common, Tom & Matt.  Great to see all of you out there!

The race got started and I’m pretty sure the whole time I was out there could be equated to me having hot flashes.  One minute I’m thinking this isn’t so bad there’s a breeze here in the shade! The next minute the shade goes away and holy cow I’m HOT!  This basically sums up how I felt the whole time.  The course was an out and back so I kept thinking just get to 5 miles and you got this!  A little bit before mile 5 I saw Jesse and was able to give him a little cheer since he was really one of the only people I knew running the 10 mile distance he was the only one I was looking for to see out there.

I know I started out fast which was not on purpose at all and I tried to keep it steady the rest of the way so I would survive in the heat.  Plus if I was going to have a chance of kickin’ it up a notch at the end I knew I needed to keep it at a steady pace.  My  main goal out there on the course was to finish it without walking. Accomplished. Very early on I thought that I should try for finishing under 1:30, but then I realized I was forgetting it was 10 miles not 9 and altered that goal to finishing under 1:35.

Another nice surprise out on the course was a familiar face at a water stop along the course, Paul!  He was giving out lots of encouraging and happy words to all the runners!  His pep was just what I needed when I saw him again on the way back! Thank you for that, Paul!

Pretty sure I’ve mentioned before I usually run with music, but there’s a majority of the time that I’m actually lost in my own thoughts than the actual music.  My ears did perk up though in the last mile as Beastie Boys – Fight for Your Right. Which helped push me to the end.  I didn’t have enough in the tank to kick it up a notch in the last mile, but I did have enough to sprint it out at the very end.

My official results were 10 miles in 1:32:16 and I finished 6th in my age group.  Not too shabby!  Which also means my goal of running under 1:35 was accomplished!

Overall it was a good race!  Thank you DRC for putting on a great race and everything that y’all do!  Once the race was over I parked it on the grass to catch my breath and was able to finally meet a twitter running friend slash fellow NTX Runner, Alicia!  Just love getting to connect with people you spend time chatting with on the twitterverse!

What’s a CASA??

If you follow us on twitter or have connected with us on Facebook then you might already know that this Saturday we are running in the first ever Dallas CASA Superhero 5K and Family Fun Run.  Beth’s future mother-in-law works for CASA and is really the main reason we know about their 5K this coming weekend.  Yes, we are also doing Big D half on Sunday – we like to do double race weekends! We’re crazy like that! 🙂

Both of us have been familiar with CASA for quite some time, but realized that not everyone might not know as much as we do! So we’ll let you in on that –

CASA (Court Appointed Special Advocates) is a nonprofit organization of community volunteers who serve as voices in court for abused and neglected children.  CASA volunteers are trained and supervised to advocate for the best interests of children in protective care and to make recommendations that help judges decide what is best for each child. For many children, a CASA volunteer is the one constant during a frightening, uncertain time. A CASA volunteer can have an immediate and critical impact on the life of a child. Less than half of the children in protective care in Dallas County have CASA voices in court. 

Fun fact for you – the sole reason that each of us know about CASA is because in college we each had a friend who was a Kappa Alpha Theta and well CASA is Theta’s philanthropy.

The superhero theme behind the race is because – Like the superheroes of childhood, CASA volunteers know that in order to achieve the best possible outcomes for abused children, they must never give up. They also know that they are more powerful when working together. The Superhero 5K brings our community together as superheroes for abused children to help Dallas CASA provide volunteer advocates for every child who needs one.

Did you know that there are more than 2,000 children in Dallas County who have been removed from their homes and are waiting for the courts to decide where they can live safely and permanently?  

As of now only two out of five abused children have CASA volunteers to advocate for their best interests and help them find safe, permanent homes.

So we would love for you to come join us, come help support Dallas CASA and help spread the word about  who CASA is and what they are doing for local Dallas County children!

Children are very near and dear to both of our hearts as Teal is a middle school teacher and Beth majored in elementary education in college, and it is our privilege to help support a great cause through our running! Registration is still open at runontexas.com

ZOOMA Zoom Zoom & a Boom Boom!

Perhaps if we believed in signs we would have seen this weekend’s madness coming but alas we did not…..

As you may know  we had a race this weekend in Austin, the ZOOMA’s [women geared yet men are welcome!] race series half marathon. Because we live in North Dallas we were not able to make the expo so we had to have our bibs mailed, and due to uncontrolled matters Beth did not receive her bib. We were a little worried/stressed but we were able to get that solved [thanks to Tricia for helping us out!].  Teal, worried about chaffing as usual and really wanted to stop at Lululemon for a running skirt. So much so she was willing to try anything (and yes, body glide is not totally working). We stopped, shopped, and then sat down and ate dinner.  We actually didn’t leave North Texas until after 8. Whoops?? We arrived in Austin to literally crawl in bed to wake up in less than 6 hours.

We got up, realized we hadn’t prepared food wise for the race and basically were like – Whelp, what can we do? Not a good sign here for us. We had PB sandwiches and shared some Swedish fish left over from our Rock ‘n’ Roll race weekend. Haha.

The race started right on time and it is clear that neither of were really paying all that much attention because as soon as we crossed the start line we had to run up our first of MANY hills.

This one was not too bad, but we kind of looked at each other in a “oh lord, is this a sign of things to come?” way.  We knew the race was a “challenging course” per the website, but we really had NO CLUE what we were about to get into, we hadn’t seen or maybe missed an elevation map. So we were completely clueless!!

As you know we both had just come off of pretty successful half’s the week before at RnR Dallas, and it was clear within a mile that our legs were not feeling it. Teal looked at Beth and was said “I feel like a brick” Beth agreed. Crap! We kept running along, Beth decided for fun to keep track of the hills we ran because it was that crazy. After mile two, we had counted 9 hills. We are not talking little ant hills, these things were insane. We started walking up the 9th hill at mile 2. NINTH! Oh crap. We have 11.1 miles left.  13.1 had never seemed so long before to us.

We continued this,  “run down, walk up,”  business that we are both very sad to admit happened.  Because for us, it’s just personal preference for the two of us, but we aren’t run/walkers.  There was just no way! We can honestly say that we checked out mentally and our bodies were not there physically, which made matters worse.  Oh and maybe we can pour a little salt on the wound with this screen shot of our weather.

We decided that we would basically not let the 2:20 pacer pass up. 2:20! Good lord! What was happening?? The hills literally just kept coming. Some were so steep that EVERYONE around us walked. We honestly think crawling them would have worked just as well.  After the race our trust Runkeeper app informed us that this was our highest elevation EVER.  We have used Runkeeper for going on almost a year and a half now.

We had no clue where the course went but luckily we ran (haha!) into this lady in front of us who was running this course for the 4th time. We give her uber props! She said we had about 2 miles out and back then around the golf course on the Hyatt Regency Lost Pines resort. Ok! How bad could that be? Yah, bad. We made it down the 2 miles out and still just felt blah, we walked a little, ran a little, ran up a few hills, but then we were just both so mentally checked out that pushing anything was just terrible.

Beth had miscounted (yep, did we mention mentally checked out??) and thought we had 3 left just as we hit 9. She looks at Teal and was like 5k left. Right?  Nope 4. We walked. That is deflating!

We hit the golf course at around 11. This is a mental issue too.  We had to do a little “trail” running. We had to run on this mulch stuff that takes every ounce of bounce out of your legs. Teal looked at Beth and said “ I do NOT want to finish.” Luckily, Beth in her logic was like, “you don’t have to, but you’ll still have to go back that way.” UGH. Might as well finish at this point.

We did some more walking. Grrr!! and managed to run it in right around 2:20ish. This marks our worst half marathon to date for each of us. It was bound to happen, we know, but we were still a little blah about the entire thing. This marked our 10th half marathon but really you wouldn’t know it by how it went for us.

We hung out after and were luckily able to grab a glass of wine from the Barefoot Wine garden and met some nice ladies out there! Fun hearing other ladies’ running stories, but ultimately we decided to just get home to Dallas!

Oh, but wait, we consulted the twitterverse as to where in Austin we should get lunch so with the recommendation of a twitter friend we stopped off at Moonshine for lunch.  If you are ever in need of a place to eat when you are visiting Austin then store Moonshine in your memory bank!  And uhhh, we HAD to stop by an Austin Lululemon and uhhh, we were in Austin we HAD to stop by The Coffee Bean & Tea Leaf!  Y’all, have we told you we love that place??

We pretty much passed the time in the car singing along to and every CD that Beth had in her car.  There might have been some dancing too….

The Month of Pink

A new month! And a month that finds us even closer to our two ultimate goals for 2011 – run a race every month and complete White Rock Marathon.

While October is a month that the majority of people associate with Halloween , I am sure more and more people are remembering that October is also Breast Cancer Awareness Month.  This year I am confident in saying that this month is more near and dear to our hearts than ever before.  If you’ve been reading our blog then you know we are fundraising for Team Cindy through our Rock ‘n’ Roll San Antonio half we will be running, which means we are raising money for breast cancer.  We have pledged to raise $1,200 – that boils down to $100 per month of our 2011 race year.  We are currently at 56% of our goal –

Yes, Rock ‘n’ Roll San Antonio is NOT officially until November so yes, we will be running the Komen 5k in Dallas on October 15th and proudly wearing Team Cindy on our shirts!

One of the exciting parts of the month of October is that it will bring the arrival of Cindy’s first grandchild!  So get ready for some cute pics of a sweet little Jack!

Cancer in general is a hard thing to deal with and there are so many people affected by it and in so many different ways!  This year we have chosen to mainly raise awareness and money for breast cancer, and also childhood cancer with our volunteering and running for the Heroes for Children 5k.
